A tiny parcel of hand-picked Pinot Noir in the cool 2006 vintage was deemed Nest Egg worthy. With only 1,992 produced, these individually numbered bottles of JOY have spent approximately one hour on the skins resulting in a delicate salmon rosé colour.
Made in the traditional ‘méthode champenoise’ style, this bottle fermented wine has been aged on yeast lees for over 18 months resulting in a fine, persistent bead.
This extended maturation on lees also provides notes of freshly baked bread and roasted chestnut. When combined with the purity of whole bunch pressed, cool climate Pinot Noir the wine delivers perfumed aromas of strawberry and cherry with subtle hints of pear and biscotti.
The long, sophisticated palate is a vibrant expression of the aromas with underlying complexity from truffle and fig flavours.
