The "2007" Bird in Hand Cabernet Sauvignon has been aged for over 18 months using new and old tight grained French oak.

It is deep purple in colour, exhibiting a rich and strogly varietal nose of blackcurrant, blackberry and black plums together with subtle aromas of toasty oak and spice.

The palate initially displays concentrated ripe fruit and subtle oak that mirror the aromas. The mid palate offers a savoury complexity enhancing the varietal fruit and subtle nuances. Silky but firm grainy tannins round out the finish, providing structure and outstanding aging potential.
